Our Process
The sap, which comes from the tree with a sugar content ranging from 0ne Brix up to Four Brix, is collected via an intricate network of pipeline that brings sap from the tree to our holding tanks and processing area.
There it is filtered and run through our Reverse Osmosis (RO) system where 50-75% of the liquid is removed. The Permeate/Filtrate, the liquid that is removed from the sap during the RO process, is stored and used again in a variety of cleaning processes.
The sap concentrate is processed on our High Effeciency wood fired evaporator until it reaches between 66 Brix and 67.5 Brix of sugar content. In boiling the sap, the evaporation process reduces it to the sweet syrup everyone loves.
It takes approximately 40 litres of maple sap to make 1 litre of maple syrup.
The maple syrup is then filtered to remove impurities and niter, also known as sugar sand.
Our maple syrup is a completely natural product, full of minerals and plant proteins, 100% pure, Certified Organic.
We also transform our maple syrup into other products such as maple candies, maple butter and maple sugar.
